HOMEMADE POTATO SALAD AND LETTUCE VEGGIE BURGER

Tonight I was in the mood to make a potato salad and I knew I had all the ingredients I needed to make an awesome potato salad. So when I got home the first thing I did was grab my potatoes. I had a russet and two golden potatoes diced them up and put them in a pot with boiling water and cooked till they were soft but not too tender. While they were cooking I diced up carrots, yellow bell pepper and kale. However I used the precut kale from Trader Joes. I went on a Trader Joe's shopping haul the other day and stocked up so a lot of the ingredients used here if not all are from TJ's. After the potatoes were done cooking which took about 15 minutes. I rinsed them in cold water drained and put in the freezer to chill while I prepped for the rest of the ingredients. In the meantime I got veganaise, mustard, pickles, peppercini (juice), garlic, paprika and cayenne pepper for the condiments. While the potatoes were in the freezer I started to cook the veggie burger which you cook at 450° for 10 minutes on both sides. During this time I started mixing up the potato salad. First I seasoned the potatoes with garlic, paprika and cayenne pepper. Next I added the chopped up carrots, yellow bell pepper, kale and pickles. Then I mixed it all up. Next I added the veganaise, mustard, pickle juice and peppercini juice and mixed it all up. During this time the burger is still cooking so I put the salad in the freezer to cool and set. In the mean time I prepped for the burger. Instead of a bun I used romaine lettuce and put avacado in it on both sides with mustard, red bell pepper and Trader Joe's Jalapeño sauce. Then once the veggie burger was done I put it in the lettuce and dished up the potato salad and voila.
Ingredients for potato salad:
1 russet potato
2 golden potatoes
1 1/2 carrots
1/4 yellow pepper
Handful of kale
1/2 cup Veganaise
3 Tblspns Mustard
1 Tspn garlic powder
1 Tspn paprika
1/2 Tspn cayenne pepper
3 Tblspns pickle juice
2 Tblspns peppercini juice
Veggie burger:
Trader Joes Hi-Protein Veggie Burger
4 pieces of Romaine lettuce
1/4 avacado (recommend more)
Mustard (use to your own discretion)
4 pieces Red bell pepper (your preference)
Trader Joes Jalapeno sauce (a little goes a long way)
