This dish is so easy, yummy and simple to make. I believe I hit a home run with this one! The ingredients I used are broccoli, mushrooms, tofu, garlic, onion, fresh cilantro, Bragg's liquid amino's, tamari sauce and crushed red bell pepper flakes. First of all I used two pans which both had olive oil. In the bigger pan I first started with fresh cut organic broccoli and diced up thick chunks of organic mushrooms covered and cooked at a heat level between medium and high. In a separate pan with olive oil (you can also use coconut oil) I cook the tofu on a medium to high heat level. The tofu has to be perfectly cubed to cook each side till golden brown and has to constantly be watched and flipped. Back to the broccoli and mushrooms I added slices of onion once I could see the mushrooms were starting to look soft. I put the lid back on and let it cook till the onions were translucent then added freshly minced garlic cloves and left the lid off. About this time which was probably 10 minutes the tofu was done and I set the tofu aside. I used the same pan and added cauliflower rice which was originally frozen but de-thawing this entire time. While the cauliflower rice was cooking I added the tofu to the mixture and let that marinade and all cook together in the garlic and onion flavors. Once the cauliflower was cooked thoroughly I added fresh cilantro. I just broke up pieces of it with my hands into the pan then stirred it around. Back to the main mixture I added Bragg's liquid amino's, tamari sauce and crushed red ball pepper flakes and let all that simmer on a low heat. Then I added garlic salt to the cauliflower rice and mixed that up and let that simmer. This took about 30 minutes and I was ready to dish up. I took the cauliflower rice put it in a little single serve dish compressed into the form and then placed the plate on top. Flipped the dished up rice onto the plate and lightly tapped the bottom of the dish for the rice to dish up and it looked perfect like restaurant quality. Haha! I was impressed with myself on that first attempt of doing that. Then I placed the mixture around the cauliflower rice and topped with fresh cilantro and voila. Please let me know what you think if you try this dish. I'm happy to hear your thoughts, opinions and experiences. Enjoy!
